Pickling things - any ideas?!

Pickled chilies are a favourite of my brother's and one of my own is pickled garlic!.!.in brine rather than vinegar which has a tendency to turn garlic an interesting but off-putting shade of blue ( there is a simple reason for this, garlic contains a tiny amount of copper which reacts with the acid in vinegar!.) And pickled mushrooms are delicious as are pickled lemons ( for use in cooking rather than for eating as they are, very popular in Moroccan cuisine)!. you can find recipes for all of these on the net!.
If you are still pickling onions then try adding a couple of chillies to each jar, they add a real kick to the onions!.Www@FoodAQ@Com
