Question: What can i have for Lunch!!?
well i didnt have lunch because i woke up late, i have a cold and im on a gluten free diet (since last week) so what can i have for lunch which has no gluten!? i cant go out and get gluten free products (i know, such a pain! Arghh!)Www@FoodAQ@Com

Well, definitely DONT have chicken noodle soup (unless its gluten free, of course)!

How about a jacket potato!? Butter, cheese, ham, tinned corn (not creamed), or home made chlli con carne make good toppings!. Or you can just have a salad with it!. You will have to grate cheese yourself if you choose that, as the ready grated stuff is coated in modified starch!.

Mind, if you have a cold you should make yourself some chicken soup with lots of garlic in it!. Throw a portion or two of chicken in a pan with just enough water to cover and a gluten free stock cube!. Mince up 2 or 3 cloves of garlic and put them in!. Bring to a boil, cover and simmer for 20 minutes!. Take out the chicken, adjust the seasoning and drink the soup (you can eat the chicken as well if you want, but it's the soup that will make you feel better)!.Www@FoodAQ@Com

CHICKEN AND WILD RICE SOUP
3 chicken breasts, cooked and shredded (leftover chicken or rotisserie chicken work well too)
2 14 oz!. cans of chicken broth (make sure you are buying a gluten free brand or making a homemade gluten-free version)
1/4 cup uncooked wild rice
3/4 cup shredded carrot
1/4 cup celery, diced
1/3 cup leek, sliced
1/2 teaspoon dried thyme
1/4 teaspoon black pepper
2 Tablespoons butter or butter substitute
2 Tablespoons brown rice flour or sweet rice flour
1 cup whole milk or casein-free milk substitution
2-3 Tablespoons dry white wine
DIRECTIONS:
In a large dutch oven, combine chicken broth, carrot, celery, uncooked wild rice, leek, dried thyme, and pepper!. Bring to boiling!. Reduce heat and simmer for 1 hour or until the rice is tender!.
In a med!. saucepan, melt butter (or substitute) and then stir in your rice flour!. Once the mixture is bubbly (2-3 mins), slowly stir in your milk or milk substitution!. Cook until thickened and bubbly!. Slowly add this mixture to the chicken broth/wild rice mixture!. Stir in your chicken and white wine!. Heat through!. Ladle into soup bowls and serve with a mixed green salad!.Www@FoodAQ@Com
