hi from new zealand,
meat pies are mainly made and appreciated in the British colonies like
new zealand, Ireland, Australia etc!.
i never heard of it being a American fare as they mainly use froot or sweets!.
mince pies you use course mince(so you know it real)
steak and / meat you use 3/4 inch cubed!.
mutton!.!.!.!.mince to med fine
(industrial bakers of meat pies use unidentifiable cheapskate cuts,gristle etc to cut costs)
for u that never heard of meat pies!.!.!.the filling is!.
7 kg of cubed beef
1500 mls worcester sauce
2 tablespoon white pepper
500 grms onion stock powder!.!.(maggie brand)
thickener!.!.!.!.!.in bucket whisk and mix 2 kilo modified corn starch in water then add caramel coloring to color to color of intant coffee!.!.ie, lite to darkesh brown!.mix!.liquid to batter consistantcy!.!.!.
then keep aside!.
boil meat for 3 hrs until tender, in 25 litre stock pot on gas ring with enuff water to cover 2 1/2 inch over meat!.!.mix enuff above thickener in whilst stirring until thickened!.!.!.then pour into heavy plastic pail and let cool overnite!.
use in savory pastrie pie base!.add egg wash to glaze and vent hole to pastrie then bake until point of boilingWww@FoodAQ@Com

I like the pies with little bits of meat in it!. This way, I can easily chew it up and taste all of the luxurious flavors on my tongue!.
With big chunks of meat, well!.!.!.!. it is kind of hard to break up, and if you swallow too early, your throat will have a hard time!.
