CREOLE SEAFOOD GUMBO
1/4 c!. butter
2 tbsp!. all-purpose flour
2 c!. liquid (water and a little juice from seafood)
2 c!. cut okra
2 c!. peeled and cubed tomatoes
1 lg!. onion, chopped
1 sm!. green pepper, chopped
1 tsp!. Tabasco pepper sauce
1/8 tsp!. thyme
1 bay leaf
2 c!. shrimp, crab meat, oysters, or a combination
3 c!. hot cooked rice
Melt butter in saucepan!. Blend in flour and cook over low heat, stirring constantly, until dark brown!. Add liquid, okra, tomatoes, onion, pepper, Tabasco sauce, thyme and bay leaf!. Bring to a boil, then cover and simmer 30 minutes, stirring occasionally!. Add seafood and cook 10-15 minutes longer!. Remove bay leaf!. Serve in soup bowls with mound of hot rice in center!. Serves 6!.

12 oysters and shells or Ramekins
1 c!. crab meat, flaked
4 oz!. cream cheese, softened
2 tbsp!. mayonnaise
1 1/2 tbsp!. dried minced onions
2 tbsp!. dry sherry
1 tsp!. dry mustard
1 tsp!. dried parsley
Shuck oysters, and wash and dry shells, or use 1 pint fresh oysters for ramekins!. Mix crab with cream cheese, mayonnaise, onion, sherry, mustard and parsley!. Place 1 large oyster in shell or ramekin!. Cover with crab stuffing and bake in hot 450 degree oven until slightly brown!. Serve as appetizer or party fare!.

Uncooked bacon

FIRST WASH THE OYSTERS!. THEN THROW THEMON THE BBQ!. WHEN THEY START TO OPEN, GET A KNIFE AND POP THEM OPEN!. PLACE THEM BACK ON THE BBQ AND PUT A TEASPOON OR TWO OF BUTTER MIXED WITH GARLIC ON THEM!. PUT SOME CRYSTAL HOT SAUCE ON THEM also!. WHEN THEY GET GOOD AND BUBBLY, EAT THEM!. I HAVE FOUND SOME PEARLS IN MINE!. BUT NOT VERY OFTEN!. AS FOR THE CRAB, IT DEPENDS ON WHAT TYPE OF CRAB IT IS!.Www@FoodAQ@Com
