I'd check into Laguiole - you can get their Chef de France line for
around $50 for a decent chef's knife!.
If you're looking for straight up value, check out Forschner's line of
working knives!.
My collection consists most of F!. Dick, Shun, Global, Henckel (back
when they were made in Germany), and Kyocera ceramic!.
The big thing to keep in mind is how the knife feels in your hand!. It
can be the most expensive knife in the world, but if it doesn't suit you,
