Whats the difference between kettle chips and potato chips?!

Kettle chips are cooked in smaller batches, an "old fashioned" method, rather than hundreds of pounds being cooked at once it may only be 100 pounds!. They are also slightly thicker than regular chips thus the potato absorbs SLIGHTLY less oil!.
