Food preserving is incredibly important for the fact that our ancestors needed to do this in order to save enough food to get through the harsh winters!.
Acid, Temperature, Time, Oxygen, Bacteria!. all of these are a factor for food spoilage!. The biggest one is moisture!. however our ancestors were very smart and came up with tons of different ways
Smoking
Salting
curing
drying
All these ways were to do one thing!.!.!.Eliminate the moisture in the food so that bacteria and insects couldn't disturb the meat!. The smoking gets rid of insects!. the salting and curing get rid of bacteria due to the fact the salt content gets so high that bacteria cant live on it and then some meats are cured then left to dry for upwards of a year!. look at your good italian salumis and you'll understand!. soprasetta and country ham are primary examples!.

lol just did this in biology!. Food needs to be preserved so harmful microbes cannot grow!.
Freezing stops microbes reproducing, also removes water from food which microbes need to survive
Pickiling lowers the pH making it more acidic!. microbes cannot reproduce in acidiccondition
we don't make things more alkaline because thisis harmful to us

Preserving to us is what the Americans call canning I think, but they use glass jars for canning and don't appear to use tin cans for canning!.
