Answers:
Typically, we are eating hens because the meat is more tender!. Roosters by comparison is tougher/muscular!.

Before the advent of groceries, one of the ways they handled the tough meat problem of roosters was to use it in the dish, Coq au Vin--Rooster with wine!. The alcohol in the wine tenderizes the meat (breaks down the muscle fiber) the same way they make Kobe beef by massaging the cows with Japanese Sake!.

Another reason why they don't use roosters!. If you've ever seen pictures of the mass chicken producing poultry farms, you'll see they are all hens!. Roosters are WAY to violent toward each other to keep them cooped up together (i!.e!. cockfighting)!. There are a few types of chickens which, when they first hatch, are color specific according to their sex (hens are born red, males are born white)!.Www@FoodAQ@Com

You could be eating either!. Depends on what you bought!. At a rest!. it's usually hens because they are more tender!. You could also be eating capons!. (desexed roosters)
