What to do with leftover tofu?!


Question: What to do with leftover tofu!?
If I only use half of the tofu in my prepackaged container, can I store it and use it and use it at a later date!?

How long does tofu (opened) stay good for!?

Most fresh tofu sold in the plastic tubs will keep up to a week, as long as you keep it under water and change that water every day!. Tofu that has spoiled will turn beige or light brown and have a sour smell to it!. See http://www!.vegfamily!.com/ann-gentry/tip2!.!.!. for more on that!.

An alternative to keeping it in the fridge is to cut it into dice-sized cubes and freeze it!.

Tofu that has been frozen has a firmer texture when thawed, and it is a little more drier than fresh!. This firmer tofu is create for use in stir frys as it doesn't fall apart or crumble as easily when you are stirring the dish!.

This way - you don't have to worry about the tofu going bad and you have something new to try!. You may find that you like tofu made like this (frozen and then thawed) that you start preparing it that way!. More info on frozen tofu at: http://en!.wikipedia!.org/wiki/Tofu#Frozen
