Those brown edges that appear in the salad bowl are cause by cutting green leaves with a steel-bladed knife!. There are plastic-bladed knives available, but by far the best way to prepare salad is to tear the leaves with your hands, and that includes any herbs that you may be using!.

Salad leaves treated in this way will keep very well in a plastic bag in the cool section of the fridge!.

I agree with the others about not cutting the lettuce with a knife and breaking the lettuce apart with your hands!. Another thing is to keep the core in if you're not going to use the entire head!. It helps keep the remaining lettuce fresh longer!.Www@FoodAQ@Com

The brown edges come from oxidation!. The chemical reaction can be stopped by tossing it with a SMALL amount of lemon juice!.Www@FoodAQ@Com
