Our family has always browned the beef, drained off the fat, and then stuffed the peppers to bake!. I don't know if its a fact, but I would think the meat would be sure to be cooked thoroughly!.
I brown the beef with some onions and spices, drain the beef, mix it with tomato sauce, cheese, and rice!. With that, stuff peppers that have been quick boiled, put in an oven safe dish that has some of the sauce on the bottom so it doesn't stick, top with some more cheese and bake in the oven!.Www@FoodAQ@Com

i season and brown my ground beef and drain it as much as i can before putting it in the pepper!.
this helps avoid a lot of excess grease and the meat appearing steamed rather then baked!.

Don't you want to drain off some fat!? I would think with raw ground beef or sausage (which I like using too) the fat would drain to the bottom and soak the bottom of the pepper making it soggy!.
Next time I will try without browning the meat first!. I'll have to use super lean sirloin though I guess!.Www@FoodAQ@Com

the reason she browned the meat first was because after she stuffed the peppers it was slow cooked!.Www@FoodAQ@Com
