What Can I Do With Blackstrap Molasses?!
I bought a jar of it not too long ago out of curiousity!. Then tasted it - and I will say that this is a taste that is forever branded in my memory!.!.!.
I couldn't get past it's "unique" flavor all by itself!. I just don't want it to go to waste - just being optimistic of having it be put to a better use (haha)

Look for old recipes that use Sorghum and use your blackstrap molasses or add a little extra sugar to regular molasses recipes!.
Here's one my parents got at an Elderhostel program back in 1993 where they watched the sorghum being cooked down from raw!. We've loved this recipe ever since and used up the 1/2 gallon of sorghum they brought home very quickly!.
SIMON’S SORGHUM COOKIES (Elderhostel Dec!. 1993)
? C sugar
1 T butter
1 egg well beaten
? C Sorghum
? C milk
2 C flour
1 t baking soda
? t salt
? t each nutmeg, cloves & allspice
1/8 t ginger
? t cinnamon
? C floured raisins
Cream sugar and butter!. Add egg, molasses and milk!. Mix and sift dry ingredients and add to first mixture!. Add raisins!.
Drop from spoon onto greased cookie sheet!. Bake in 325°F oven for 10 to 12 minutes!.Www@FoodAQ@Com

Use it anywhere you need a sweetener!. It doesn't take very much!. The 'unique' taste you mentioned is extreme sweetness, to the point of being bitter!. I can't tell you all of the nutrients, but I do know it is a good source of iron!.Www@FoodAQ@Com
