How do you eat healthy on a budget?!

Beans!. Learn how to cook beans from their dried state!. They are so healthy--full of fiber and protein among other benefits!. And easy with a bit of planning!. also, if you shop early in the day, you can find fresh meat and veggie bargains!. I bought 5 pounds of organic beef for a bargain--the dates were fine but I guess the store had too much!. Then I bought 2 HUGE bags of fresh broccoli florets marked down to $1!.99 each!. I stuck one in the freezer right away!. And then beans were on sale for $1 and change for a pound dried beans!. I bought 2 each of our favorites and one new one to try!.
I usually cook for 4-6 men/teens!.
This week we had:
Sunday(fed 6 men and boys) with 1 pound dried red kidney beans and 1 pound ground beef!. Cooked broccoli!. Rice!. Plenty of leftovers for lunch the next day and another day for husband!.
Monday--Lentil soup with kale, cooked pasta (again leftovers for lunch and we dropped off a large bowl of it to a family friend)
Tues--Tuscan white bean, spinach and sausage soup, cooked broccoli(again lunch leftovers)
wednes & thursday--homemade pizza and spinach salad(had enough dough for next day's dinner but I made roasted spinach pizza
Friday--Black beans over rice with carmelized onions(suoer cheap and amazing tasting) chopped cilantro, chopped pickled jalapenos and from homemade corn tortilla chips!.
Nothing fancy but good and healthy and filling!. Peasant food!. That's the way I like to think of my cooking!. :) And we rarely buy soda!. Instead we make fresh iced tea!.Www@FoodAQ@Com

The cheapest is buy generic frozen veggies and fruits they are just as good and last longer in freezer!.
Plan ahead the meals you would like for that week buy those
ingredients and be sure to use them!.
Buy in bulk at warehouse stores like Sam's club, costco if you don't have a membership walmart!. This can also cost mor because you are buying in bulk, so be careful!.
