Creamy Chicken Enchiladas
2 cups chopped cooked chicken or turkey
1 cup chopped green or red pepper
1 8oz jar Pace picante sauce, divided use
1 8oz package Philadelphia Brand cream cheese, cubed
8 flour tortillas (6 inch)
? LB Velveeta Process Cheese spread or Velveeta Light, cubed
? cup milk
Stir chicken, green pepper, ? cup picante sauce and cream cheese in saucepan over low heat until smooth!. Spoon 1/3 cup chicken mixture onto each tortilla; roll up!. Place, seam side down, in lightly greased 8 x 13 baking dish!.
Stir cheese spread and milk in saucepan over low heat until smooth!.
Pour sauce over tortillas; cover with foil!.
Bake at 350F for 20 minutes or until thoroughly heated!.
Pour remaining picante sauce over tortillas!.

Egg Sandwich

I Egg!. (boiled, semi soft)
2 Slices of bread!. (regular white optional)
Spread!.
Snipped Chives or the green of spring onions!.
(i) Boil the egg until the yolk is not quite set!. Cut egg in half and scoop out the egg!. Season with S&P (a little curry powder optional) and mash!.
(ii) Spread bread with butter or margarine, then spread over the egg!.
(iii) Sprinkle with the chives or spring onions, cover with the second slice of bread an cut into fingers or triangles!.
If you get the egg cooked just right you will have a perfect moist sandwich that isn’t soggy, and will have a distinctive yolky taste
Hot Pot:- Beef, Garlic & Herb!.
1T Garlic & Herb Salt!.
1T Flour!.
750g (1?lb) Blade Steak, cut into 40mm (1?”) chunks!.
1T Oil!.
1 Onion!. (sliced)
2 Celery Stems!.
1 Capsicum!. (any colour)
1 420g (15oz) Can Thick Tomato Soup!.
Bay Leaf!.
Preheat Oven to 190C (380F)
Combine garlic and herb salt with flour and mix well and toss in the meat to coat!.
Fry meat in batches to colour!.
Transfer to a casserole as they are done!.
Add the onion, celery, capsicum and bay leaf!.
Pour over soup and an equal quantity of water, stir to combine!.
Cover and cook for 1?-2 hours!.
Remove bay leaf and garnish with parsley!.
Serve with mashed potatoes!.
