Where can i get bacon that does not let out a lot of water?!
Every time i cook the stuff, it leaks loads of water and cr*p, i want bacon WITH rind on, and THICK CUT and NO WATER!.!.!. any ideas people, Ive tried organic, outdoor breed!.!.!. you name it Ive tried it!. I live in london!.Www@FoodAQ@Com

Not sure about the UK!. Yes brining is used for Ham and Corned Beef etc or the Ham is injected to keep it from being so dry from the smoking process!. Some bacon here in the USA is injected or brined and it is usually the cheaper brands but not always the cheaper ones!. Look for just the Smoked Bacon!. Check the ingredients to see if they do add to the bacon in the processing!.
A Meat Packing company(ones that slaughter, cut, and package) will often send out the parts to be smoked by another company!. In turn, in a few weeks when the process is completed the smoked products come back ready to be wrapped for the customer!. You might look for a Smoking House where they do that and see if you can purchase bacon that is just smoked!.
Have you looked for smoked jowl!.!.!.!? That usually comes with the skin on, and is whole, so you can slice it how ever you want!. This takes longer to cook than regular bacon!. We have bought it a few times and it is darn good, and a treat!.Www@FoodAQ@Com

the only place you can get 'real' bacon is from a farm that slaughters its own pigs!.
i used to work for a company that deals with pigs from slaughter right down to packing the meat!. they would come in 1 end a live pig and exit in packets!.
anyway!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.!.
with meat products including bacon, regardless of if its organic etc, when the bacon is all cut!. its (what they call) washing the meat which involves injecting the meat at high pressure with a brine solution!.
not only does it clean the meat but its a con's way of adding more weight to the piece of meat itself getting more money for something that's not actually the correct weight when killed!.
like i said, try hunting down a farm that slaughters its own and buy like that!. the bacon tastes better plus theres nothing else added!

Ah, I bet you are buying crappy supermarket bacon that has been salted and brined!.!.!. vile! I know what you mean!. I am afraid you are going to have to find somewhere that stocks REAL organic bacon, a farm shop or the like, and spend more money in the process!. Have you tried the Whole Foods centre on Kensington High Street, they might be worth trying!. Otherwise get yourself into the car and head South West!.!.!. !Www@FoodAQ@Com
