Answers:
The Dutch Blue is quite strong and crumbly( not for everyone)!.
Cabrales is the strongest blue( it actually burns your mouth)!.

Gorg( Italian) comes in 3 varieties, Dolce, Piccante and Mountain( Dolce is the soft mild one)!.
American Gorg is no better then a cheap blue ( that's made by Stella)!.
With Italian Gorgs, there are several makers, Galbani, Clint, Carozza( my fav) and many more!.

If you can get your hands on St!. Pete's from Minnesota, your in for a treat!.
St!. Agur( France) is fantastic( when fresh)!.
Avoid Cambozola unless it's extremely snow white( a mix of brie and gorg)!.
A good Natural rind Stilton( such as "Cropwell and Bishop" ( and others) is "The King Of Blues( along with the disappearing Roquefort) (because of extremely high duties)!.
Stilton with Port " A Match Made in Heaven"!.

Remember that cling film is it's biggest enemy!.
It's ok for a few days, but it must breath( or bad mold will form on the top and side( which can be scraped away)!.
Every few day, remove from the cling film and wrap in foil so some air enter allowing it to breath( same with all cheeses)!.
