What types of policies and procedures for storing and issuing products might be appropriate for a small independent restaurant that has a single walk-in refrigerator-freezer combination, one 10 ft. x 15 ft. dry storage room, and a few single and double door reach-in refrigerators?

>Talk to your state food inspectors and ask them for advice. Call your regional FDA and ask them. Also, you can get plenty of good advice from your local county health inspector. Don't treat these people like enemies! Look upon them as being a good source of practical advice. They should be able to all help you write good policies and procedures for food safety.
