When you say "uncooked bread" do you mean raw dough?

It depends on the recipe, but usually, yes, it's fine in the fridge for one night -- in fact many baking recipes recommend giving the dough a full night of slow fermentation. The cold of the fridge slows down the yeast, but not entirely.
