Question: How to keep Roasted Red Peppers in a jar fresher longer?
I love roasted red peppers, have made my own, but often buy them at the supermarket in a jar, like "Mancini" brand. I have a big problem keeping them from getting moldy awfully fast, and am tired of wasting them. I have tried putting them in little packages in the freezer, but feel it compromises the texture a bit. Someone suggested draining a little of the liquid out and topping the jar off with a little olive oil. Has anybody got an opinion or knowledge about if this is a good idea? Thanks much

Yes, topping it up with olive oil is the way to go. Mold needs oxygen in order to grow. Submerging the roasted peppers (or sundried tomatoes, or garlic, or artichokes) keeps mold from forming.

I regularly oil preserve peppers, tomatoes, garlic, eggplant, and artichokes, and they will last for a month or more.



That will be OK as long as you keep it refrigerated. It might inhibit the mold growth a little. Try it and see.
