It's tough to categorize:
Brown bear had a very gamey taste, and a greasy, rope like texture that explains why the American Indians dried it as a means of preservation. It's probably better that way.
Gazelle jerky which was surprisingly bland.
Grilled aligator is very much like chicken in texture with a slightly fishy taste. I prefer it fried with a little salt.
If you're interested and have the time and cash to do some travelling for research, Reata in Ft. Worth, Tx and Alpine, Tx almost always have something on the menu to surprise you.

Although not as exotic, game was on the menu every time I went past, albeit that was in 2000. I might love proscuitto, but for some reason, a germanic influence on the way meats are prepared for a dish win hands down.

My father was a hunter:
-Venison (Deer) It was only slightly gamey. Great as chicken fried steak or cooked with Juniper Berries, or Sauerbraten (German style)
-Elk -This is a very lean cut. It is very similar in taste & texture to high grade beef.
-Antelope: There is NO need to eat this very strong smelling relative of the sheep. Really.
-Alligator: Tried this on a vacation to New Orleans. Yes, it tasted just like chicken. No really thrill here.
-Tripe (Beef): I eat this in the traditional Mexican stew known as "menudo". It is the lining of a cow's stomach. It is prepared all different ways in various cultures from Asian to Italian. In Italy, there is a specific stall of a street vendor who sells "tripe sandwiches" all day long.
-Oxtail (Beef): I love this cut when it's braised slowly for hours. It is fantastic in a rich stew.

When I was in French Polynesia I was offer a fish dish that wasn't explain to me and was given a fish head and the cheek was the nicest fish I had ever tastes, along with the eyes.
Pig's Head is a favorite.
Kangaroo. It was similar to venison which is lean and a little gamey tasting. Delicious nonetheless.
Camel steak, very light coloured me and very tasty. That was in 1953 in Egypt.
