Why doesn't my pizza get crispy?!


Question: Why doesn't my pizza get crispy?
I make homemade pizza on cookie sheets. For some reason it is not getting crispy underneath. I use oil on the bottom to keep the pizza from sticking to the tray. Do you think that the oil is keeping the bottom of the pizza mushy? It gets crispy around the edges but thats it.

Pizzas are made professionally in really really hot ovens at around 550oF (290oC).
If yours is a deep dish, thick pizza considering partially pre baking it then filling it,
Some of the best pro pizza places have a little oil IN the dough - not under it!

You need a different pan. Try a pizza pan like one of these:

We make pizza and make the crusts extra thick so the bottom isn't soggy.We also don't spray the pan or use cookie sheets.We use metal trays.

Dad worked at Papa Johns (pizza place)
And he knows how to make excellent pizza!



Try turning your oven up as hot as it will go.... I use just a little bit of cooking spray... That just coats the bottom but doesn't make it soggy...
