Question: Does canned vegetable preserve the Vitamin C nutrition?
Does the canning process destroy the Vitamin C nutrition of the vegetables?

Answers:

Only a bit. But it does not destroy the vitamin C. Of course, the longer the cooking process, the more nutrients are broken down, but vegetables are amazingly resilient. Canned veggies are still nutritious.
