What is the difference between pure honey and raw honey?!


Question: What is the difference between pure honey and raw honey?
I just bought some grade A Golden Blossom Pure Honey and I was wondering if it was as healthy as raw honey. Is the pure honey pretty good also even thought it doesn't say raw. Does it still have health benefits?

Raw honey is unpasteurized.



The 'Grade A' primarily refers to the clarity of the honey. Grade A is clear and free of any particles.

'Pure honey' refers to the fact that there should be nothing else but honey in the product. Sometimes other sweeteners like corn syrup are added.

Raw honey mainly refers to the fact that the honey is not heated past 95 degrees Fahrenheit and is not fine filtered to remove all the pollen and other beneficial substances that are in honey. 95 degrees is about the maximum temperature in a beehive. Not heating ensures that the beneficial enzymes in the honey are not destroyed. The reason the honey is often heated is to make it easier to filter. Fine filtering can make the honey last longer without crystallizing. And although crystallization does not affect the honey in the least, people tend like the look of liquid form better. The other reason it is heated is to kill any yeast that may cause the honey to ferment, a rare event when the moisture content is below 18% (normal percentage).

So by heating the honey, the enzymes are lost and some of the flavor too, but what of the health benefits?

While not as healthful as raw honey, the pure honey still has some heath benefits:

- Honey is better for you than sugar because its combination of glucose and fructose is slowly absorbed into the blood stream avoiding the insulin spike that causes craving and possibly contributes to Type 2 Diabetes.

- Proper fueling of the liver as central to optimal glucose metabolism during sleep and before-, during and post-exercise.

The pasteurizing process will destroy some of the nutrients and health benefits of raw honey. I've attached a link to an article which explains it very well.
