What is the difference between a purple potato, a dark yellow potato, and a light yellow potato?!


Question: What is the difference between a purple potato, a dark yellow potato, and a light yellow potato?
I've seen them all at the store, and all of them taste the same to me.
I like potatoes though, I usually boil one and eat it as-is with soup or something.

I have a very weak sense of taste though, so is the flavour difference very subtle?

There is a subtle flavor difference. A purple potato tastes earthier to me. A dark yellow potato tastes richer.
The main difference in different kinds of potatoes is the protein content. That results in a different texture when they are cooked. Low protein potatoes are fluffier. High protein potatoes are firmer and stickier. White potatoes are low protein. Yellow ones tend to be high protein. I think the purple ones are low protein, too.



There is very little difference in the taste but the best way to cook them differs.
The ones that look purple are actually red or sweet potatoes which have a lower Gi lever so are better for you.
The darker ones are probably better for baking and the lighter ones are usually newer and smaller so are better cooked whole.
Some are more floury and some more waxy.
