Why does the pan burn?!


Question: Why does the pan burn?
I cooked homemade hamburgers twice in a row this week and I mixed in worceshire sauce, and heinz 57 sauce to add some flavor, and the pan would start to burn really bad. I'm wondering why that happens. I would have to take a break and wash the pan several times and put the bugers back in. Also it was a non stick pan. Thanks.

heinz got sugar thats why it burns.



The sugar in the sauces burn very rapidly. Even though you're using a non stick pan, try adding oil or butter. Nonstick pans cannot really withstand high high heat anyway. Best to go with a cast iron pan, or try baking the patties or cooking on an outdoor grill. You can always add the sauces after the meat has been cooked (just like adding ketchup or mustard).

Your temperature was probably too high, and all of those sauces caramelize and will burn at high heat.
You should be cooking at medium and may not have enough oil in the pan.



I'd say your temp was too high, and the heinz has sugar which will burn. Instead do a couple dashes of worceshire (sp?), and maybe add in some diced onion or minced garlic.
