Gruyere is one of my most favorite melting cheeses. simply wrap it in plastic wrap and keep it in the fridge. It will last a good long time. But I recommend that whenever you plan on cooking with it, take it out of the fridge about 45 minutes to an hour before you use it. In this way you will get all of the flavor nuances gruyere provides. The same way you would open a bottle of red wine a half hour before you actually drink it.

Wrap in Saran and then in a Ziplock baggie, pressing to remove excess air,and place in the chiller drawer of your fridge.

Try not to handle with hands that have been in contact with any uncooked meats or deli meats.

This is a very good cooking cheese and is excellent with chicken cordon bleu or even cheese on toast.

As a friend once asked,"Why does something as smelly as this taste so good?"

in the freezer
