Vegetables to add to pasta?!


Question: Vegetables to add to pasta?
Is it ok to have whole wheat pasta twice a week for lunch. WHat kind of healthy vegetables could I add? I am trying to save $ but also want to eat healthy. What are some other easy quick take to work lunch ideas. I don't like eating sandwhichs everyday.

You can try a combo of the following and pick whatever you like best:

Steamed asparagus with sour cream and low-fat mozzarella
Cherry or grape tomatoes with fresh basil leaves and olive oil
Spinach
Shredded Carrots
Steamed Eggplant
Black Olives with cherry tomatoes with a light Italian dressing
Broccoli, preferably cooked with ranch dressing

if you make this on a weekend you can have it every other day or so, as long as you have access to a microwave.


Pasta Primavera

3 carrots, peeled and cut into thin strips
2 medium zucchini or 1 large zucchini, cut into thin strips
2 yellow squash, cut into thin strips
1 onion, thinly sliced
1 yellow bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1 tablespoon dried Italian seasoning
1 pound farfalle (bow tie) or any small regular or whole wheat pasta
15 cherry tomatoes, halved
1/2 cup grated Parmesan

Preheat the oven to 450 degrees F.

In a very large bowl toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer the vegetable mixture to 2 heavy large baking sheets and arrange evenly. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.

Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes, or to package directions. Drain, reserving 1 cup of the cooking liquid.

Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste.

Sprinkle with the Parmesan and serve immediately.



Well if you boil the pasta in a little bit of vinegar and add red and green peppers and onions, that's amazing. Trust me. Its also good when you stir fry the veggies first, but you want the healthy alternative, so choose the first option.



String beans and shrimp? I don't know, this is something from my personal taste
