Question: Good sellers for a quick service restaurant?
So I am very close to reopening a restaurant that my family owns that has been sitting vacant for a year. I plan to open only friday and saturday nights. It is in a small town and these are the only nights people go out to eat and I kinda want to catch the bar crowd. We have a liquor license so I'll move some alcohol as well and I hope for some decent phone in/take out business. But anyways I know Im doing pizza and wing and nachos. Aside from that is their anything worth doing, FYI im a professional chef and all my food is nice so no frozen cheese sticks, everything I make has a nice touch so I want this place to be like a chipotle grill atmosphere where its just good food quick, and eliminate a wait staff because we used to be full service, but in a small town people dont want to tip and they want the most for their money. So the plan is walk in go to the counter order get your drinks at the counter in Styrofoam cups (maybe plastic reusable not sure yet) take your drinks sit down and food is out in ten minutes. I want this to be quick service ten minutes max for all your food. Anything else that can be done nicely and quickly that might sell? Im thinking maybe a chicken Caesar salad too for the ladies. But what I dont want is a bunch of stuff just sitting that I cant move and is not interchangeable with other menu items.

I'll try w/ the little info of this small town. Lets see, your a Culinary Grad ( Like a certified artist w/ wisdom of the laws of food ) Some ego comes w/ that, so maybe you should think outside the box ( let go of the self centered, narcissistic norm that comes w/your accomplishments ' along w/ trying to be a lawyer ' & sexual addiction ), & use your skills to try & feel what this " small " town can relate to & be wowed @ the same time. I'm sure you got some idea, " Chipotle? " Is this west, midwest, or southern, "small " town? Do the majority know it's a smoked jalapeno? Your only going to be able to execute to their comfort zone ( what they know & like ), since there wont be any servers to educate your talents (as the middleman ) to your customers. Something can be affiliated to your small town that you will be able to relate it to. You could use an herb as part of the name, " Basil's ", " Sage " ( followed by the cuisine ), " Portabella's " ( followed by the cuisine ) etc. Good luck
