Well fruit plants propagate by animals eating their fruit and dispersing the seeds in their droppings. One theory is that most tree fruits are brightly colored to help attract animals to the fact that the fruit is there - but it only turns bright once the seeds are ready. And since leaves are always green (due to chlorophyll) red is a contrasting color to bring more attention to the fruit.

Even fruit like yellow pears have a red blush to them when fully ripe.



I see plenty of green apples around. But its the different chemical compounds in the apples that gives them their colour.
Apples get their red color from chemical compounds called Anthocyanins, and the researchers have figured out which gene controls the amount of Anthocyanin produced.

They aren't, red delicious apples are normally red though because that certain species of apples is normally red.
