>Every chemical has a functionality, that in some manner, preserves the color, flavor, texture, taste or appearance of the food...also affects shelf stability and antimicrobial stability. Processed food is meant to be stable under shelf life conditions. It is not "FRESH" food. So if you don't like the chemicals, you have options, like Trader Joe's or some organic food store...there are options to buy non-preserved foods.

Fresh fruits and vegetables have a short shelf-life. In other words, the grocer must sell them quickly or they will go bad. Manufactured products filled with artificial preservatives can last for years and there is no waste.. It's all about profit.

Mostly because it is produced in much larger quantities and can be shipped without storage. That tends to keep the unit cost low.
