>I just cut the entire garlic bulb in half and then roast it on a flat cookie sheet in my oven. It doesn't take very long! Maybe 5 minutes or less. I think I have done it at 450 F before. You must keep a sharp eye on it or it will quickly burn up if you don't. So I would recommend checking it after a couple of minutes in the oven up to about 5 minutes. There is a distinct difference between roasted garlic which is brown and burned garlic.

You can still roast it in a small pan in the oven on 350 and watch that they don't burn, they will eventually get soft and you can take it out and squeeze the paste in the potatoes. Don't forget to cut the top of the garlic bulb so it will be easy for the garlic to squeeze out. or if you have parchment paper or brown paper bag will work just like aluminum foil.

Rub the baking tray with a little oil, put the peeled or non peeled garlic on the tray & cook until golden, the skin tends to be really tough though so id keep the skin on & that will act as aluminium foil, once its done just squeeze the garlic & all the sweet delicious garlic comes out & leave the shell :)

Just roast it without - you don't need foil. Put the whole bulb in and the skin will protect the cloves from drying out. Then let the garlic cool and squeeze the flesh out of each clove.
