Granny Smith for eating and making pie & cakes :)
English Cox. by far the best of dessert apples. Also like Egremont Russets and English Braeburn. For cooking I like Bramleys especially cored and cooked whole in the oven or microwave with currants and sultanas and spice. This is delictious either alone or topped with a little custard.

Apple wise there is a new kid on the block. Jazz apples (no sniggering at the back!) are a cross between Braeburn & Royal Gala. I'm looking forward to trying them.

Any Gala, but specifically the Aurora Gala (which unfortunately for me and just about everyone else is seldom available outside of British Columbia).
