Why is our apple juice like this?!


Question: Why is our apple juice like this?
We bought a generic brand of bottled apple juice a few weeks ago and left it out after opening it. Because it wasnt refrigerated when we bought it we just assumed it was ok to leave out. Well today my husband opened it and it fizzed as if it was carbonated. We smelled it and it smelled just like beer. We are concerned because we have been giving it to our son the past few weeks. Its not supposed to expire for another year. What is happening to it?

Hi Groove child, air has gotten ito it and it has begun to ferment either due to the natural sugars in the apple or from added sugar. Either way it is not a controlled ferment - basically it is just rotting and needs to be thrown out. Once any of these type juices have been opened they need to be consumed within a day or so of opening especially if being given to a child. The expiry date is only an indication if the carton or bottle has not been opened. Once opened it as I said should be consumed quickly as if it were fresh juice. I hope this helps,all the best. Rab

it wasnt refrigerated because it was pastureized(free from bacteria)before you opened it, you allowed bacteria to enter the juice. bacteria grows best between 40 and 140 so leaving it on the counter is an ideal temperature. the smell of alcohol is caused by the juice fermenting and the fizzing was the release of gas created in the fermentation process. ok with all of that said, people who arent smart enough to put juice in the fridge should not be allowed to procreate. i expect your next question to be asking why your ice cream which you keep in a dark drawer is melting



It is fermenting into cider, albeit not very good cider. You should probably throw it out.
