Question: What order should I put vegetables in a soup?
Carrots, Potatoes, Celery, Broccoli, Spinach, Canned Green Beans, Canned Tomatoes, Tofu. Which goes in first?

How long you boil tofu should depend on the desired texture you're looking for in your recipe. For example, if you want a more meat-like texture, let the tofu boil a little longer so the outside edges become tougher. An average boiling time is about 20 minutes, though letting it boil for longer won't hurt it.

potatoes take the LONGEST to cook out of all of these.
so:

potatoes, carrots, celery, broccoli, spinach, canned green beans, canned tomatoes.
just add tofu anywhere in there, according to how the texture of your soup.

I would start by putting a little bit of canola oil in the bottom of your pot & lightly sauteing the tofu with a little bit of chopped onion and maybe a bit of minced garlic or ginger. Then I would add the celery, carrots, and potatoes, and allow them to saute & brown for a few minutes. Following that, I would add the broccoli and saute for another couple of minutes. At that point, I would add the stock and let the vegetables cook until they are tender. At the end, stir in the tomatoes, green beans, and spinach. Allow the spinach to wilt down and the other vegetables to heat through, then serve. Bon appetit!



Carrots and potatoes need to go in first, then broccoli, celery. Spinach doesn't need to cook long. Canned veggies can be added at the end since they're already fully cooked. You can add the tofu fairly early on if you want it to pick up the flavors of the veggies.
