What would Lean Meat Mince Meat be like?!
Is there any reason why you cant buy it like this?
Would it not cook properly?

You could always try Quorn mince.I am not a vegetarian but like you dislike gristly bits in mince.Must admit I,ve not made burgers with it,just cottage pie and bolognese sauce but it should be o.k.
As a chef, the fat in mince is important as there is a lot of flavour in fat. Trouble is that some mince is just too fatty as too much is added to bulk it out. You can usually tell whether or not mince has a good ratio or not.
If you are getting "chewy bits" in your mince I'm not sure where this is coming from other than perhaps poorly hung meat and too much poor quality meat is being added to your mince.
There is no reason why you can't ask the butcher to create the leanest mince he can for you. However you may find the texture dry. The fat does add a lot of succulence.
I always buy lean steak mince...its usually named "ground beef" when in its reduced fat form, rather than "mince". Cook with it as you normally would mince, you can brown it in a pan without adding any oil, dont forget to drain off any fat before you continue (there will always be a bit i suppose). Its always worked for me, i havent bought normal mince for years.
Lean or low-fat mince is very easy to buy, and you use it just like ordinary mince.
Take care if you drain of any fat - don't tip it down the sink or it' ll solidify and block the drain - tip it into a used jar or can and put it in the dustbin.
