Crock-pot BBQ Pork Sandwiches

INGREDIENTS:
? 1 boneless pork shoulder roast, about 2 1/2 to 3 pounds
? 1 cup chopped onion
? 1 bottle (12 ounces) barbecue sauce, your favorite
? 3 to 4 tablespoons honey, or to taste
? dash hot pepper
? sandwich rolls
? coleslaw, optional

PREPARATION:
Place pork roast in a lightly greased 3 1/2 to 5-quart slow cooker. Combine onion, barbecue sauce, honey, and hot pepper; pour over roast. Cover and cook on LOW setting for 7 to 9 hours. Remove, let cool, and shred with fingers or forks.

Serve on buns, topped with slaw, if desired. Delicious with beans and coleslaw!
Serves 6.



Madeleine’s Crock Pot Swiss Steak

Ingredients
? 1/4 cup all-purpose flour
? salt and pepper to taste
? 1 1/2 pounds round steak, cut into small pieces
? 3 tablespoons vegetable oil
? 3 stalks celery, chopped
? 1 onion, chopped
? 3 carrots, shredded
? 2 (14.5 ounce) cans diced tomatoes with juice
? 1 tablespoon Worcestershire sauce
? 2 tablespoons brown sugar, or to taste
Directions
1. In a shallow bowl, mix the flour, salt, and pepper. Lightly coat the round steak pieces in the flour mixture.
2. Heat the oil in a skillet over medium heat, and saute the celery, onion, and carrots about 5 minutes, until tender. Remove from heat, and set aside. Mix in the round steak pieces, and cook until lightly browned.
3. Place the vegetables and steak in a slow cooker. Mix in the tomatoes with juice, Worcestershire sauce, and brown sugar.
4. Cover, and cook 8 to 10 hours on low, until the round steak is very tender.



1)Japanese chops

8 Lamb Chops
1/4 cup Soy Sauce
1 tablespoon Honey
1 tablespoons Red Wine Vinegar
2 tablespoons Sherry
2 cloves garlic; crushed
1 teaspoon Ginger; ground
1/2 cup chicken stock

Put the chops in the crock pot. You could brown first if you like but I did not and they looked great when done.

Mix all the other ingredients in a small bowl and pour over the chops.

Put on the lid and cook for about 8 hours on low. I did stir about half way through but this is optional.

Just before serving, I spooned out some liquid into a small saucepan. I added about a tablespoon of corn flour to a little water so it dissolved and added this to the sauce. Boil for a minute, stiring until it thickens.

Pour over chops and enjoy.

We served with a mixture of beans but would be delicious with creamy, mashed potato.


2) Pasta Fagioli



2 lbs ground beef
1 onion, chopped
3 carrots, chopped
4 stalks celery, chopped
2 (28 ounce) cans diced tomatoes, undrained
1 (16 ounce) can red kidney beans, drained
1 (16 ounce) can white kidney beans, drained
3 (10 ounce) cans beef stock
3 teaspoons oregano
2 teaspoons pepper
5 teaspoons parsley
1 teaspoon Tabasco sauce (optional)
1 (20 ounce) jar spaghetti sauce
8 ounces pasta


Directions:
Prep Time: 15 mins

Total Time: 7 1/4 hrs
1 Brown beef in a skillet.
2 Drain fat from beef and add to crock pot with everything except pasta.
3 Cook on low 7-8 hours or high 4-5 hours.
4 During last 30 min on high or 1 hour on low, add pasta.

Braised roasts like chuck roast, ribs, roast turkey, baked ham. MMMMM baked beans, spaghetti sauce. Cakes, breads, etc. Get a slow cooker cook book at your local 2nd hand book store.



I usually use mine for roast dinners or pasta.
I have a small one I use for desserts like custards, rice puddings and ordinary steamed puddings.
