While the whites are almost entrely protein, the yolk has loads of vitamins you need. The yolk only provides about 1 gram of protein. Your body does well with 1 or 2 yolks at breakfast, depending on your body size, but you don't really need more than that to get your daily value. Plus, having a bunch of yolks in in one sitting means your body won't absorb as many of the nutrients than if you ate an egg in the morning and one at night (same thing goes for multivitamins). I'd suggest keeping 1 or 2 yolks per person in your meal but bulking up your omelet, pancake batter, or quicke with whites.
It is the yolk but in the latest reports one whole egg per day is good for you.
