Can you put homemade pancake mix in the fridge for 2 days then still use it ?!
I made pancake mix 2 days ago (eggs, milk and flour) and put it in the fridge as i didn't use it all, not that I've got it back out it's gone a funny colour, but i stirred it and it looks ok.
Is it still ok to use or shall i make a fresh batch ?

It's safe but your cakes will not be fluffy-all the fizz has gone out of your leavening.
how many eggs? 2 days ago? so it's the third day now? - I'd throw it but it is still edible 'i guess?' - only if you cook it dry and not moist
