Using KFC coleslaw as an example, the makeup is about half carbs and half fat with little protein. The cabbage, carrots, and other grated vegetables provides a few grams of dietary fiber, which is a good carbohydrate, but most of the carbs come from added sugar. The fat, as you can imagine, comes from the mayonnaise. In a homemade coleslaw, cutting down on the sugar and using a lighter subsitute for regular mayo can greatly reduce the negative qualities and make it a healthier source of vegetable nutrients.
