How long does dehydrated food last?!

Question: How long does dehydrated food last?
I'm talkin bout veggies and fruits and beef

Answers:

If it is kept completely dry and stored safely in a dry cool place, all packaged up separately( apples with apples, etc) to prevent any moisture, moulds, rats or mice or bugs, then for months and years depending on the thing itself. If it has fat in it, it may go rancid. My Granny used to dehydrate food in the fall to last over the winter until the garden started producing again. She would dry the seeds on the roof of the log cabin on a sheet of cheese cloth and covered with another sheet so that the bugs couldn't lay eggs in the seeds. She also dehydrated apple rings and pear rings, apricot halves, huckleberries, sarvice berries, choke cherries as they didn't have electricity or a fridge to keep things cold. They did have a freezer locker in town to keep the elk and deer meat frozen.

You will notice that many dehydrated foods have sulphur dioxide in them to keep their colour and texture. It keeps bugs away. It isn't good for you if you are allergic to sulfa drugs.

Look up this topic in dehydrating books for more information.
