What are these hard nodules in my manchego cheese?!


Question: What are these hard nodules in my manchego cheese?
It is a nice cheese, but it has these little, white things in it. They have no flavor that I can detect. I can break them with my fingernails, and they are maybe hard enough to break a tooth on. Anyone know what they are?

Answers:

Nope, I don't know, but Parmesan has them too.
