Question: Sugar art Sculptures ?

So on ultimate cake off they were making sugar sculptures and to pull the molten sugar, the lady poured it on something and then started like doing the stuff.

My question is, What surface did she pour it on the it didn't stick and didn't melt the stuff? I was wondering that ALLLLL day

its called a silpat

generally, molten sugar is poured into silicone molds and let harden.
