coconut milk isn't related at all to cow milk
you can use the same reasoning for everything coming from the ground
you can also say we eat sunligh, because we eat plants that use sunlight to make energy... or we eat animals that eat those plants.
Which also means that we eat Hydrogen since the sun is a big ball of burning hydgogen and all plant life and therefore life in general comes from plants

This is the type of reasoning/comparisons that my three-year-old daughter would deduce. By your "logic", then, cow milk is vegan. IF it were, I still would not drink it as it is intended for the calf. (As I type this, my three-month-old son is breastfeeding.)
