why does Colby and Monterrey jack cheese barley have any flavor?!

Monterrey Jack is used for a lot of spicy Mexican dishes that don't need a "competing" flavor, just one that will complement the stronger flavors. I think it's delicious myself. (I don't like Colby much.)
In jail they mix colby and monterrey jack cheese with hot sauce and crackers and call it Duna!
