And where does cornmeal stand as a healthy flour?

White flour is pure evil. You may as well shoot heroin, it's just glucose with NO nutrition. Even rats won't touch it if you leave it in a cupboard.
100% wholegrain flour is good.
Soyflour is good.
Walnut flour is very good.
Mung bean flour is lovely.
Rice flour is good, a bit strachy though.
Cornmeal is OK, it has a lot of fructose in it tho. It is the substance that High Fructose COrn Syrup comes from, corn has a LOT of sugar, and as long as you eat as raw as possible, or as little processed your liver won't suffer, but cornflakes, corn syrup and all the processed parts of corn are really not great to eat.
Cornmeal is healthy- Polenta is a healthy food ( cornmela in Italy).
Personally I hate the flavour, but that's just my taste!
NEver ever eat enriched white flour- they put vitamins in it, and it's poijntless. White flour is pure gluten and glucose and your liver has NO natural way to process all that glucose. Your body is only designed to eat wheat with the bran, and germ attached- nature has its own perfect system, and eating the white stuff on the inside WITHOUT the fibre and oil attached to it, as designed by nature, our natural bodies suffer.
You'd be OK a week, a year, five years eating white flour, but soon you'd notice the damage.
So...eat organic red 100% wholemeal /wholewheat flour is you MUST eat wheat.
I much prefer oatmeal flour, or soyflour and walnut flour.

Gluten free are best ie rice corn etc.
