I think the first step is that your family has to sit down together and decide that you want to eat better and start cooking more. There's no point in trying to cook when no one wants to (except you, it seems!)
You could start by taking some cooking classes to inspire you, or buy a cookbook.
When you say "cheap dinners", a lot of dinners are cheap to make - certainly cheaper than buying prepared meals from the supermarket. If you focus on a healthy, balanced diet with lots of fruit and veggies you'll be surprised at how cheap it can be!
Also have a look at some of the major cooking websites out there. Many have some good advice for people who are just starting out.

Buy things that can last more than one meal. Things like beans and rice, spaghetti, potatoes, beef, chicken. Make enough to feed the family and whatever is left eat at lunch sometime during the week.
