They're very good. Tender, not at all slimy. And great with garlic butter.
To me, snails have the same consistency as calamari.
Given that they are usually served swimming in garlic and butter, they taste like buttered garlic calamari (or prawns, as someone else said).
They don't really have a taste of their own, in my opinion.
I do not think they have a particular taste but rather bland and slightly chewy but the garlic butter and parsley gives a great taste.
Prepared properly they are very good. I am careful just what restaurant I order them from. Not all cook them right. They have their own taste , not fishy but sea taste. Cooked with garlic oil and bread for dipping compliments the snail.
They taste very similar to shrimp.... taste and texture wise.
