Does honey turn to sugar when you put it in hot coffee or tea?!


Question: Does honey turn to sugar when you put it in hot coffee or tea?
I'm not supposed to have any sugar in my diet (like refined sugars) but I heard that if you heat up honey, it turns to sugar. Is this true?
If I put honey in my tea or coffee, which would be very hot, would that be just like I'm putting sugar in my coffee/tea?

Honey is sugar and water with about 2% "other".

If you are diabetic, substituting honey for sugar is pointless. The glycemic index of table sugar is 64. The glycemic index of honey is 62, an almost identical number. (For those who mistakenly think every little bit counts, adding a single extra drop of honey will have more of an affect on your blood sugar than the difference between table sugar and honey.)

If you think that "refined" sugar is any different from "unrefined" sugar, you are being fooled. Truly unrefined sugar is a beet. The sugars in there are chemically the same as "refined" sugar. What is sold as unrefined sugar is the same sucrose as "refined" sugar with a little bit of molasses added back to it that makes it a pretty brown color.

Medically and nutritionally, there is not difference between refined sugar and so-called unrefined sugar. But there are plenty of people who want to believe.

Some people confuse simple carbohydrates with refined sugar. All sugars are simple carbohydrates. It is simple chemistry, and your body will turn them into energy (ATP) via glycolysis. Refined or "unrefined" doesn't make a difference.

Complex carbohydrates are not sugars, but are longer-chain carbohydrates that get broken down into sugars, which are then turned into energy. Because it takes more time to convert complex carbs into sugar, they raise your blood sugar more slowly than eating simple carbs (which are sugars).

Honey is used as a sweetener in many countries. Honey will go sugary if left too long but it can still be used. Personally I find it too sweet.
