In the 40's in Germany, they were just hoping to come out of the war alive.
Food shortages, political strife, a nut job names Hitler ruling their country.
I don't think gourmet dining was a concern for the average German citizen.
Until World War II was over, there were food shortages. A major German staple has always been potatoes, so potatoes probably made up a major portion of 1940s diets. Sauerbraten & sauerkraut are other traditional dishes. Sauerbraten was probably more limited in the 1940s as it uses beef, whereas sauerkraut is cabbage & would keep well.

German father & grandparents...we ate a lot of sauerbraten & sauerkraut.
Wiener Schnitzel, which is lean tender veal cutlet, pounded flat then breaded and fried in oil.
Also Spatzel, which is a German dumpling shaped like a long thick noodle, which would have been served with gravy or mixed with green beans. And of course Bratwurst, which is pork sausage.
Just to name a few. This is basic German food that has been around for a long time.
