yes they are cooked and no they do NOT have all the nurtrients cooked out of them.
If that were the case, everyone who ate canned veggies all those years when fresh veggies simply were not available would not have been healthy and we know that is not the case.
Fresh in many cities right now come from other countries and have been in transit for long time periods.
Fresh veggies begin to lose nutrients as soon as they are picked and in that case, canned and frozen are more nutritious than "fresh" that has been picked in Chile, boxed, shipped, sat in a warehouse, shipped, sat in a loading dock, shipped, and sat in the back room at the store and then finally makes it to the sales counter.

yes, there cooked in a way that is comparable to microwaving (nearly all the nutrients have been cooked out of them) go with fresh or frozen



Yes, they are cooked into oblivion in the canning process. They're mushy and taste more like the can. Frozen is a better option if you can't get fresh.



All foods that are canned in commercial cans are heated to such a degree that they are cooked.



Yes....all caned food is cooked after the canning process. If it wasn't the cans would explode in a matter of a few days.
